Your wedding is a beautiful celebration of love and new beginnings.  A curation of special moments. Your nearest and dearest from far and wide come together to witness and share those moments with you. 

I imagine you would like your wedding to be an experience, with each element thoughtfully considered to take your guests on a journey. 

Design, aromas, textures, tastes, and sounds all coming together to play a part in creating beautiful treasured memories.

Your wedding cake can be one of those carefully considered elements. I like to think of flavour as the core and foundation of your bespoke wedding cake. 

I imagine you may be a foodie who has travelled the world and experienced exquisite cuisines. You may have grown up with unrivalled family recipes and cultural dishes, which till this day evoke feelings of love, comfort, and togetherness.

Imagine choosing your wedding cake flavours based on some of those memories. 

One of the best things about flavour is that the possibilities are endless. With each choice the aim is to celebrate the ingredients by highlighting their unique flavours and creating pairings that work harmoniously. 

Here’s how I like to approach and categorise wedding cake flavours:

  1. For the love of fruit:  the freshness of spring, the refreshing tastes of summer, the earthiness of autumn and the heartiness of winter. Fruits are a great way to celebrate seasonality and highlight the ingredients at their very best. Delicious examples are- strawberries and pink champagne, pistachio and lemon, vanilla and cloudberry, Vanilla spiced apple.

Deliciously Decadent: When you think of delicious indulgent flavours, what ideas come to mind? The epitome of this for me is a moist chocolate cake with silky smooth salted caramel. A superb variation of this would be have miso caramel and incorporate some caramelised pears. Some fruits like raspberries, apples and orange work really well with chocolate.

Decadent however does not always mean chocolate. A great example of this is- vanilla, pineapple and dulce de leche. This flavour was created for one our amazing brides, as it was something her grandmother would make for her. This was such a beautiful way to share her beautiful childhood memory with their guests.

Timeless nostalgia- there are some flavours that are timeless classics. They are recognised and loved by many. Flavours like red velvet, the Victoria sandwich, carrot cake, coffee and walnut. The classics are perfectly delicious; you could however also add a little twist.

For example adding feuilletine to a carrot cake for some texture, pecans to a chocolate baileys cake.

You may be drawn to one particular flavour or have a combination of flavours that are meaningful to you. The beauty of a tiered cake is that you can have a different flavour for each tier.

Creating an amazing cake is a delicate balance of flavour and design. When creating cake flavours, I like to turn perishable ingredients like fruits into a compote, jam or curd and avoid using elements like fresh cream. This is because a wedding cake is a structure that is built over a few days and we want to make sure that the elements on the inside remain fresh and delicious when the cake is cut and served.

If you would love a cake with fresh fruit or cream, I would suggest perhaps having one or more of your cake tiers as iced dummy tiers(this is when a polystyrene form is iced in the same way as we would a normal cake. There would be no outward difference in the appearance of your cake)

You can then have cutting cakes that can be refrigerated until they are ready to be served.

Wedding cake flavours have evolved tremendously since the days of fruitcake as the only option. There are lots of options to choose from and scope to create your own bespoke flavour. Whatever you decide- think of it as not just a cake, but as an experience for the senses. Take your time to explore and taste different flavours then decide on something meaningful to you.
